Raw Snickers

Raw, Vegan, Gluten Free, Refined Sugar free.....and still tastes amazing!

I found this recipe, for a healthy version of my favourite chocolate bar, on pinterest courtesy of "A Sunshine Misson". Now I have discovered this blog I plan to try many of the recipes, so watch this space.



For the base
1 1/2 cups cashews
1/2 cup shredded coconut
8 Medjool dates, pitted
3 tbsp brown rice syrup

For the peanut butter caramel
8 Medjool dates, pitted
1/4 cup peanut butter
2 tbsp almond milk
1 tbsp brown rice syrup

For assembly
1/4 cup peanuts
1/2 of a bar of raw chocolate


For the base:
In a food processor, process cashews into small pieces.
Add in coconut, dates, and brown rice syrup and process until a sticky dough forms.
Press into a loaf pan lined with parchment paper and put in the freezer.

For the caramel
Process all ingredients, adding almond milk a little bit at a time until a smooth caramel forms.
Spread caramel over the base.

For assembly
Scatter peanuts on top of the caramel and press down lightly.
Melt your chocolate in the microwave, stirring every 15 seconds until completely melted.
Drizzle chocolate over the top of the bars.
Place back in the freezer until hardened.
Remove from the freezer, cut into bars, and eat!
