Healthy Energy Bites.

As a Mum it's very easy to get caught up in making sure you have everything necessary for your baby; from nappies and wipes to drink and snacks, that you often forget about yourself.

Energy is paramount when parenting, especially when breastfeeding (and if you're realizing that the term "sleeps like a baby" is absolute rubbish)! So make sure you are fuelling yourself to maintain your energy levels, whilst continuing a healthy diet.

These little balls of energy are perfect, if like me, you hit that afternoon slump and crave something sweet. They are a perfect hand bag sized snack, they are super easy to make, don't require tonnes of weird ingredients and involve NO baking! DREAMY!



1 cup rolled oats
2/3 cup toasted coconut flakes
1/2 cup almond butter
1/2 cup ground flax seed
1/2 cup dark chocolate chips
1/3 cup honey
1 tablespoon chia seeds (optional)
1 teaspoon vanilla extract


1. Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour.
2. Once chilled, roll into balls of whatever size you would like. (Mine were about 1.5" in diameter.)
3. Store in an airtight container and keep refrigerated for up to 1 week.
Makes about 15 balls.
