My postnatal client Lara made these for our celebratory picnic after the first 8 week block, they were delicious! She gave me the recipe and with my first batch I assumed she had made a typing error with the 26g of coconut flour, so I added some more. She hadn't. Needless to say it was a little dry. Coconut flour expands so you really do not need much, when I made these the second time I stuck to the recipe and they were perfect! These are SO easy to make, what are you waiting for?
-26g of coconut flour
-60g cocoa or cacao powder
-4 large eggs
-140g maple syrup
-80ml of melted coconut oil, butter, olive oil
-handful of dark chocolate drops (optional but good!)
*You could also add nuts, dried fruit, orange zest, peanut butter or what ever takes your fancy.
1. Mix everything together except the chocolate drops, you can even do this in the pan you are using.
2. Stir in the chocolate drops and any other flavours you fancy
3. Bake at 180 for about 20 minutes, it should be set around the out side and slightly soft in the middle, the less you cook it the gooeyer they will be try and let it cool before you eat it.
**They will keep for about 5 days in a tin if you don't eat the whole thing whilst watching an episode of bake off!
